Bringing Morocco to Sevenoaks

Recently we were asked to cater for a 5oth birthday celebration, we got straight to work!

We always find it best to try and get a real feel for our clients requirements and also there likes and dislikes as far as the food, drink and style of service goes, man companies send out a big list of stock dishes they prepare day in day out for all there events. Here at Organic Spirit we never do this, we talk to our clients and create a menu around them.

As we talked to Mary she told us that they had just had an fantastic holiday in Morocco as a birthday treat for Alan her husband so we suggested loosely themed food and drinks around the spices, fruits and fragrances of the exotic nation.

Moroccan inspired buffet in Seven

Mary wanted to keep things informal and relaxed so we suggested having a buffet where guests can freely graze on some Moroccan inspired street food. Many of the herbs and salad leaves are grown in our poly-tunnel at Organic Spirit HQ ensuring the freshest of organic ingredients make there way into our dishes.

Lamb and Chicken sharwamas, 24 hour marinated chicken and lamb slow cooked, shredded and wrapped in soft flat breads with Moroccan spiced salads, pickles, sumac yogurt sauce and spicy harrisa

Warm falafels served in earthenware bowls with hummus, babaganoush, kisir (rice and herb salad) and marinated olives

 Lamb and vegetable tagines slow cooked for eight hours with mixed fruits, a blend of exotic spices and nuts and served on bejeweled tabuleh

To keep in line with the Morocco feel of the evening it would only be right to shake up some delicious cocktails to accompany the food and get the party stated, we brought along one of our illuminated mobile bars to serve from and created some outstanding drinks for all the guests.

Gin Souk-ed Sour

Spiced organic gin shaken with home made black cardamom bitters, and a hint of bergamot liqueur. Served in a martini glass with rose petals.

Moroccon Mint Tea Cooler

Tea infused vodka, vanilla syrup, and lemon juice lovingly stirred and toped with soda water.

The beginning of a beautiful friendship

Date infused golden rum and lime juice sweetened with pineapple juice and finished with a splash of dry sherry and garnished with dried pineapple.
